Bocconcini Salad (pronounced bok-kon-chee-nee sa-luhd)

I fell in love with this cheese last summer in Montreal  ♥  It seriously tastes good with everything (paninis, salads, veggies, fruits, grilled, you name it)! I woke up one day with a sudden urge to eat it and thus began my search for the perfect bocconcini salad.

I found a simple and delicious bocconcini, tomato and basil salad on taste.com and it went perfectly with my steak and wine dinner.The recipe calls for:

  • 2 tablespoons extra virgin olive oil
  • 1 1/2 tablespoons balsamic vinegar
  • 1 garlic clove, crushed*
  • 1 teaspoon caster sugar
  • 600g ripe tomatoes 
  • 6 large bocconcini, drained
  • 1 cup fresh basil leaves, large leaves torn

*I’m not a huge fan of garlic so I opted out of it

Step 1: Mix the oil, vinegar, sugar, and garlic in a small bowl.
Step 2: Cut tomatoes and bocconcini into slices and arrange them accordingly on a plate.
Step 3: Top with basil leaves and drizzle the dressing over it.

Voilà, you’re done! Seriously one of the easiest yet healthy and delicious summer salad. Now that’s killing two birds with one stone.
