Strawberry Spinach Salad with Balsamic Vinaigrette

Summer is all about that froyo and slush puppies (trust me, I know) but amidst the delicious cravings comes a new type of craving–salads!

First thing that comes to your mind must be dull and tasteless lettuce with some type of boring dressing. It’s hard to be super duper excited about salads but you’d be surprised to know that sometimes, it doesn’t take carbs to know what delicious is!

I found a simple recipe for the classic Strawberry Spinach Salad that nicely mixes to bring out the flavour of sweet strawberries, nutty pecans, and salty feta. Top it off with some drizzled balsamic vinaigrette and voilà, you have yourself a perfect summer salad.

Ingredients for salad:

  • 4 cups baby spinach (or any greens of your choice)
  • 1 cup sliced strawberries
  • 1/2 cup pecans
  • a handful of feta cheese, crumbled

Ingredients for balsamic vinaigrette:

  • 1/4 cup balsamic vinegar
  • 3/4 cup olive oil
  • 2 tsp sugar
  • 1 tbsp minced garlic
  • a pinch of salt and pepper

Step 1: Whisk together all the ingredients for the vinaigrette, set aside.
Step 2: Toss together spinach, strawberries, and pecans. Sprinkle as much feta as you like over it.
Step 3: Drizzle with balsamic vinaigrette and enjoy!
